Spring is finally making an appearance here in Seattle, and that means looking for fun ways to enjoy the sun! And what better way to enjoy the sun than to indulge in cool, refreshing fudgsicles! Fudgsicles are a warm weather staple in my household, and I love that if you make them yourself, they can be healthy and delicious! Today I’m sharing how to make your own Mini Peanut Butter Banana Chocolate Fudgsicles that both you and your kids will love!

The small size is perfect for little hands and my kids love popping these in their mouths! They’re also much less messy than regular sized fudgsicles, and even my 2 year old can keep her own drips under control. No complaints from Mom there ;).

Let’s get to work!

Healthy Fudgesicle Recipe

Supplies:
fudgsicle mold (these adorable Wilton Cake Pops Pan were perfect to make the mini fudgsicle shapes)
fudgsicle or lollypop sticks (I used 4” Lollipop sticks and they were the perfect size)

Ingredients:
*makes 12 mini fudgsicles
1 cup almond/coconut milk or coconut cream for extra creamy fudgsicles!
1/3 cup peanut butter
2 ripe bananas
3 T cocoa

Mix all ingredients in a blender on high power and pour into fudgsicle mold.

Put mold in freezer and after 30-60 min (or once the liquid has firmed up enough to hold a stick in place), place a fudgsicle or lollypop stick into each fudgsicle.

Return mold to the freezer and let freeze completely. Since these are mini fudgsicles, they freeze quite quickly and there’s not as much waiting time – bonus! To get fudgsicles out of mold, pour some warm water into the bottom of a dish and place the mold into it for about 20 seconds. The fudgsicles will slide right out and be ready to enjoy!
